Orlando—Nationally renowned chef John Taser will head up Knife & Spoon, a new restaurant opening at Orlando’s Ritz-Carlton in October. The restaurant replaces Norman’s. Specializing in New American cuisine focused around seafood and dry-aged steak, Knife & Spoon will be a 235-seat restaurant and lounge in a bright array of beiges, grays and brass. The ceiling will resemble of sky of clouds. There will also be a moss garden, adding to the feeling of bringing the outside in. Cocktails will tie into Ritz-Carlton founder Cesar Ritz.
