Orlando—Back in the day, a single New York City restaurant called Rosa Mexico started making guacamole tableside so customers could watch. That was it, the biggest deal. Well, the restaurant thrived even after chains copied that avocado-mashing bit. Today Rosa Mexicano has 10 higher-end Mexican restaurants around the country, and another will open in Orlando’s Swan-Dolphin hotel. Target: early 2023. Since that’s a convention hotel (on Disney World property), this restaurant will seat 300 people, including a bar and a private dining room. Orlando is slim on creative, better-than Mexican food, so let’s greet Rosa Mexicano warmly. Margaritas, anyone?
